Tender, juicy chicken simmering in a creamy, cheesy sauce with perfectly cooked broccoli—this is the ultimate comfort food made easy in a crockpot.

Ingredients

Scale
  • 23 boneless, skinless chicken breasts
  • 2 cups fresh broccoli florets, cut into bite-sized pieces
  • 1 cup shredded sharp cheddar cheese
  • 4 ounces cream cheese, softened
  • 1 cup low-sodium chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: Paprika or red pepper flakes

Instructions

  1. Season the chicken breasts with salt, pepper, and onion powder.
  2. In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, minced garlic, chicken broth, and any additional spices.
  3. Place the seasoned chicken breasts into the bottom of the crockpot. Pour the cheese mixture over the chicken, ensuring it is fully coated.
  4. Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours until the chicken is tender and easily shredded.
  5. Add the broccoli florets to the crockpot 30 minutes before the cooking time is done. Stir gently to coat them in the sauce and replace the lid.
  6. Once done, shred the chicken into bite-sized pieces directly in the crockpot using two forks. Stir everything together to combine.
  7. Serve hot over rice, pasta, or mashed potatoes, or enjoy as is.

Notes

[‘Don’t overcook the chicken to avoid dryness.’, ‘Add broccoli during the last 30 minutes to prevent it from becoming mushy.’, ‘Use freshly shredded cheese for better sauce texture.’, ‘Double the batch for meal prepping as it freezes well.’, ‘Adjust seasoning to taste before serving.’]
