  • 34 lbs beef chuck roast, trimmed of excess fat
  • 4 cups beef broth (low-sodium preferred)
  • 1/4 cup soy sauce
  • 2 tablespoons Worcestershire sauce
  • 34 cloves garlic, minced
  • 1 large onion, thinly sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Freshly ground black pepper, to taste
  • French rolls
  • Provolone cheese, sliced

Instructions

  1. Trim any excess fat from the chuck roast and season it lightly with black pepper. Slice the onion thinly and mince the garlic.
  2. Add the beef broth, soy sauce, Worcestershire sauce, garlic, onion, thyme, and rosemary to the crock pot. Place the chuck roast in the liquid.
  3. Set your crock pot to low and cook for 8-10 hours, or on high for 4-6 hours. The beef should be fork-tender and easy to shred.
  4. Use tongs or two forks to shred the beef into bite-sized pieces. Return the shredded meat to the crock pot to soak up the flavorful juices.
  5. Slice the French rolls and toast them lightly in the oven or on a skillet for added crunch.
  6. Pile the shredded beef onto the toasted rolls, top with slices of provolone cheese, and let the cheese melt slightly.
  7. Ladle the warm cooking liquid into small bowls for dipping and serve alongside the sandwiches.
