  • 1 pound (450g) shrimp, peeled and deveined
  • 12 ounces (340g) pasta (fettuccine or linguine recommended)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 1/2 cups (360ml) heavy cream
  • 1 cup (100g) Parmesan cheese, freshly grated
  • 1/2 cup (120ml) chicken broth
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Fill a large pot with water, add a generous pinch of salt, and bring it to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp and season lightly with salt and pepper. Cook for 2-3 minutes per side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Be careful not to let the garlic burn—stir often!
  4. Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer and let it cook for 3-4 minutes until slightly thickened.
  5. Reduce the heat to low and stir in the Parmesan cheese until melted and the sauce is smooth. If the sauce is too thick, add a splash of the reserved pasta water to thin it out.
  6. Add the cooked pasta to the skillet, tossing to coat it evenly in the creamy sauce. Return the shrimp to the skillet, gently mixing them into the pasta.
  7. Sprinkle with freshly chopped parsley and red pepper flakes, if desired, for a pop of color and flavor.
