These irresistible Cowboy Sliders are packed with bold flavors – smoky, savory, and just the right hint of sweetness. Perfect for tailgate parties or backyard gatherings, they are easy to make and a guaranteed crowd-pleaser.

Ingredients

Scale
  • 1 pound (450 g) ground beef (80/20 lean-to-fat ratio)
  • 8 slider buns (e.g., Hawaiian rolls or plain slider buns)
  • 8 slices cheddar cheese (sharp cheddar preferred)
  • 46 slices bacon, cooked until crispy
  • Barbecue sauce (smoky or tangy, store-bought or homemade)
  • Pickles (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Butter (optional, for brushing buns before toasting)

Instructions

  1. In a mixing bowl, combine 1 pound (450 g) of ground beef with 1 teaspoon salt and ½ teaspoon pepper. Mix gently with your hands – don’t overwork the meat.
  2. Divide the beef into 8 equal portions and shape into small patties, about 3 inches (7.5 cm) wide.
  3. In a skillet over medium heat, cook 4-6 slices of bacon until crispy. Remove and set aside on a paper towel to drain excess grease.
  4. Using the same skillet, cook the patties on medium-high heat for 3-4 minutes per side, or until cooked through. Add a slice of cheddar cheese on top of each patty during the last minute of cooking. Cover with a lid to melt the cheese.
  5. Optional – brush the tops and bottoms of slider buns with melted butter and toast them in the skillet for 1-2 minutes until golden.
  6. Place each cooked patty onto the bottom half of a bun. Top with a piece of crispy bacon, a drizzle of barbecue sauce, and a pickle slice if desired. Finish with the top bun.
  7. Arrange the sliders on a tray or platter and serve warm. Enjoy!
