  • 1 cup powdered sugar (optional glaze)
  • 23 tbsp milk or heavy cream (optional glaze)
  • 1/2 tsp vanilla extract (optional glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Make the streusel topping: In a medium bowl, whisk together the flour, brown sugar, granulated sugar, and cinnamon. Stir in the melted butter until crumbly. Set aside.
  3. Mix the cookie dough: In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes). Add the eggs one at a time, followed by the vanilla extract.
  4. Combine dry ingredients: In a separate bowl, mix the flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing just until combined.
  5. Form the cookies: Use a cookie scoop or tablespoon to portion the dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Add the streusel: Gently press a spoonful of streusel topping onto each cookie, making sure it sticks.
  7. Bake: Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Allow them to cool on the baking sheets for 5 minutes before transferring to a wire rack.
  8. Optional glaze: Mix powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled cookies for an extra touch.

Notes

Chill the dough for 15-20 minutes if your kitchen is warm to prevent spreading during baking. Adjust the cinnamon or sugar in the streusel to suit your preferences.
