This chicken enchilada casserole is a quick and easy comfort food loaded with cheesy, saucy, and bold Mexican-inspired flavors. Perfect for busy weeknights or feeding a crowd.

  • 2 cups cooked chicken, shredded or diced
  • 2 cups enchilada sauce
  • 12 corn tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • 1 cup black beans, rinsed and drained
  • 1 cup frozen corn, thawed and drained
  • 1/2 cup diced green chilies
  • 1/2 cup chopped onions
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté the chopped onions until softened and lightly caramelized, about 5 minutes.
  3. Briefly heat the corn tortillas in the same skillet to soften them, about 30 seconds per side.
  4. In a bowl, combine the shredded chicken with 1 cup of enchilada sauce, salt, and pepper. Stir until evenly coated.
  5. Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish.
  6. Add a layer of tortillas, followed by chicken, black beans, corn, diced green chilies, and shredded cheese. Repeat until all ingredients are used, finishing with a generous layer of cheese on top.
  7. Cover with foil and bake for 20 minutes. Then, remove the foil and bake for another 10-15 minutes until the cheese is golden and bubbly.
  8. Let the casserole cool for 5 minutes, then sprinkle with fresh cilantro before serving.
