A comforting and hearty crockpot recipe combining cheesy potatoes and smoky kielbasa, perfect for family dinners or potlucks.

Ingredients

Scale
  • 1 bag frozen diced potatoes
  • 1 pound kielbasa, sliced into rounds
  • 2 cups shredded cheddar cheese
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Prepare ingredients by peeling and dicing fresh potatoes if using, and slicing kielbasa into rounds.
  2. In a mixing bowl, combine cream of chicken soup, sour cream, milk, onion powder, garlic powder, salt, and pepper. Stir until smooth.
  3. Grease the crockpot lightly to prevent sticking. Add half of the frozen diced potatoes as the first layer.
  4. Spread half of the soup mixture over the potatoes, ensuring even coverage. Layer half of the kielbasa rounds on top.
  5. Sprinkle half of the shredded cheddar cheese over the kielbasa. Repeat the layers with the remaining potatoes, soup mixture, kielbasa, and cheese.
  6. Cover the crockpot with the lid and cook on low for 5-6 hours, or on high for 2.5-3 hours, until the potatoes are tender and the cheese is melted.
  7. Once cooked, stir gently to combine all the layers. Taste and adjust seasoning if needed.
  8. Serve hot, garnished with chopped parsley if desired.
