  • 2 cups cooked chicken, shredded or diced
  • 23 cups broccoli florets, chopped into bite-sized pieces
  • 1 cup uncooked white rice (or 3 cups cooked rice)
  • 2 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • 2 tablespoons butter (optional)
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish lightly with butter or cooking spray.
  2. In a large skillet, combine the uncooked rice and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender.
  3. Steam the broccoli for about 4-5 minutes until it’s just tender. You can use the microwave or stovetop for this.
  4. In a mixing bowl, whisk together the cream of chicken soup, milk, garlic powder, salt, and pepper.
  5. Once the rice is cooked, stir in the shredded chicken, steamed broccoli, and the sauce mixture. Mix until everything is evenly coated.
  6. Pour the mixture into your prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
  7. Place the dish into the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let it sit for 5 minutes before serving.

Notes

Use leftover chicken for convenience. Don’t overcook the broccoli to retain its crunch. Grate your own cheese for better melting. Adjust salt levels based on broth and soup. Prepare ahead and store in the fridge for up to 24 hours before baking.
