Instructions

  1. Measure all ingredients and allow butter and egg to come to room temperature.
  2. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt for 30 seconds.
  3. In a large bowl, beat softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add honey, egg, and vanilla to the butter mixture and mix until fully combined.
  5. Add the dry flour mixture in two batches, mixing gently until a soft dough forms. If sticky, add 1-2 tablespoons flour.
  6. Wrap dough in plastic wrap and chill for 20-30 minutes (optional but recommended).
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Roll dough out to 1/4 inch thick on a lightly floured surface. Cut out shapes with cookie cutters or scoop tablespoon-sized rounds and flatten.
  9. Arrange cookies 2 inches apart on baking sheets and bake for 8-10 minutes, until edges are set and centers are slightly puffed.
  10. Let cookies cool on the sheet for 2 minutes, then transfer to a wire rack to cool completely.
