  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • 3 minced garlic cloves
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Optional: red pepper flakes, sesame seeds, chopped green onions

Instructions

  1. In a mixing bowl, combine honey, soy sauce, ketchup, rice vinegar, sesame oil, ground ginger, and minced garlic. Whisk until smooth.
  2. Place chicken thighs in the crockpot and pour the sauce over them, ensuring each piece is coated.
  3. Set the crockpot to low heat and cook for 6-7 hours, or on high heat for 3-4 hours, until the chicken is tender and easy to shred.
  4. Prepare the cornstarch slurry by mixing cornstarch and water in a small bowl until smooth.
  5. Remove the chicken from the crockpot and set aside. Stir the cornstarch slurry into the sauce, cover, and let it thicken for 15-20 minutes.
  6. Shred the chicken using two forks and return it to the crockpot. Stir to coat the chicken in the thickened sauce.
  7. Serve hot with rice, noodles, or vegetables, and garnish with sesame seeds or chopped green onions if desired.
