Instructions

  1. Pat the pork tenderloin dry with paper towels. Trim any silver skin or excess fat, then slice into 1-inch thick medallions.
  2. In a medium bowl, whisk together honey, chipotle powder, minced garlic, lime juice, olive oil, ground cumin, salt, and pepper. Set aside about 2 tablespoons of the glaze for basting.
  3. Add the pork medallions to the bowl with the glaze and toss gently to coat all sides evenly. Let sit for 15-20 minutes at room temperature or up to 1 hour in the fridge.
  4. Preheat grill or grill pan to medium-high heat (about 400°F). Lightly oil the grates to prevent sticking.
  5. Place pork medallions on the hot grill. Cook for 3-4 minutes per side, brushing with reserved glaze once or twice during cooking. Grill until internal temperature reaches 145°F.
  6. Transfer medallions to a warm plate and let rest for 5 minutes to allow juices to redistribute.
  7. Garnish with chopped fresh cilantro and serve immediately.

Notes

Avoid marinating longer than 2 hours to keep pork tender and not mushy. Baste glaze near the end of grilling to prevent burning. Use a meat thermometer to ensure pork reaches 145°F for juicy, slightly pink center. Rest meat for 5 minutes before serving. For indoor cooking, sear medallions on stovetop then finish in 400°F oven for 5-7 minutes.
