A creamy, flavorful homemade pumpkin spice latte made with real pumpkin puree, warm spices, and your choice of milk. This easy recipe takes less than 10 minutes and is better than any coffee shop version.

  • 1 cup milk of choice (whole milk, oat milk, or almond milk)
  • ½ cup strong brewed coffee or espresso
  • 12 tablespoons maple syrup (or honey, brown sugar, or stevia)
  • ½ teaspoon pumpkin pie spice (store-bought or homemade)
  • ½ teaspoon vanilla extract (pure)
  • Pinch of salt
  • Whipped cream (optional, for topping)

Instructions

  1. Brew your coffee. While the coffee is brewing, start the milk mixture. You want about ½ cup of strong coffee per serving.
  2. In a small saucepan, combine 2 tablespoons pumpkin puree, 1 cup milk, ½ teaspoon pumpkin pie spice, ½ teaspoon vanilla extract, a pinch of salt, and 1-2 tablespoons maple syrup. Whisk to combine.
  3. Place the saucepan over medium heat. Whisk occasionally as it warms. Heat until hot but not boiling—small bubbles around the edges are your cue. This takes about 2-3 minutes. Do not let it boil.
  4. Carefully pour the hot milk mixture into a blender. Blend on low for 10-15 seconds, then high for 5 seconds, until smooth and frothy. If you don’t have a blender, use an immersion blender or whisk vigorously.
  5. Pour the brewed coffee into your mug. Slowly pour the blended pumpkin milk over the back of a spoon to create layers (optional). Stir gently to combine, or leave it layered.
  6. Top with whipped cream if using. Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top. Serve immediately.

Notes

Don’t skip the blender step—it emulsifies the pumpkin into a silky, cohesive drink. Use room-temperature milk for best results. Taste as you go and adjust sweetness. Watch the heat to avoid scorching the milk. The pumpkin milk mixture can be stored in the fridge for up to 3 days. For extra foam, blend for an additional 10 seconds on high.
