  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup smooth peanut butter (for filling)
  • 2 cups powdered sugar
  • 34 tablespoons heavy cream
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, cream together the peanut butter, unsalted butter, granulated sugar, and light brown sugar until smooth and fluffy (about 2–3 minutes).
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing to keep the cookies tender.
  6. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Press each cookie lightly with a fork to create the classic crisscross pattern. Bake for 10–12 minutes, or until edges are golden but centers are still slightly soft.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. While the cookies cool, prepare the filling. In a medium bowl, beat the peanut butter and powdered sugar together until smooth. Gradually add heavy cream and vanilla extract, beating until the filling reaches a spreadable consistency.
  10. Once cookies are completely cool, spread or pipe the filling onto the flat side of half the cookies. Top with remaining cookies to create sandwiches.
