Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat 1 cup (226g) of softened unsalted butter and 3/4 cup (150g) granulated sugar until light and fluffy.
  3. Mix in 1 large egg (room temperature) and 1 tsp vanilla extract until fully combined.
  4. In a separate bowl, sift together 2 cups (250g) all-purpose flour, 1/2 tsp baking powder, and a pinch of salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms. Do not overmix.
  6. Wrap the dough in plastic wrap and refrigerate for 20 minutes.
  7. Roll the dough into balls (about 1 tablespoon each) or use a cookie press for decorative shapes. Place them on the prepared baking sheet, leaving space between each cookie.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
