  • 4 Russet potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 celery stalks, diced
  • 2 carrots, diced (optional)
  • 3 garlic cloves, minced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 4 cups chicken broth (or vegetable broth for vegetarian option)
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Peel and dice the potatoes, chop the onions, celery, and carrots, and mince the garlic.
  2. In a large soup pot, melt the butter over medium heat. Add the onions, celery, and carrots (if using) and sauté until softened, about 5 minutes.
  3. Add the garlic and stir for 1 minute, just until fragrant.
  4. Sprinkle the flour over the vegetables and stir well to coat. Cook for 1-2 minutes to eliminate the raw flour taste.
  5. Slowly pour in the chicken broth while stirring to avoid lumps. Bring to a simmer.
  6. Add the diced potatoes and Cajun seasoning. Stir to combine and let the soup simmer for 20-25 minutes, or until the potatoes are tender.
  7. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until creamy.
  8. Return the soup to the pot and stir in the heavy cream. Adjust seasoning with salt and pepper to taste.
  9. Let the soup simmer for an additional 5 minutes, stirring occasionally.
  10. Serve hot, garnished with green onions and shredded cheese, if desired.

Notes

Adjust the Cajun seasoning to your spice preference. If the soup is too thick, add a splash of broth or water to reach your desired consistency. Let the soup cool slightly before blending to avoid spills.
