Instructions

  1. Pour 1/2 cup (120 ml) filtered water into a medium bowl. Sprinkle 2 tablespoons (24 g) grass-fed gelatin evenly over the water’s surface. Let sit for 5 minutes to bloom.
  2. In a small saucepan, combine 1 cup (240 ml) elderberry syrup, 1/4 cup (60 ml) fresh lemon juice, and 2 tablespoons (42 g) raw honey. Warm on low heat, stirring gently until honey dissolves and mixture is hot but not boiling (about 3-4 minutes).
  3. Remove saucepan from heat. Whisk in the bloomed gelatin thoroughly until completely dissolved, about 1-2 minutes, until smooth and slightly thickened.
  4. Quickly whisk in 1/4 teaspoon (about 1 g) zinc gluconate powder and 1/2 teaspoon (2.5 ml) vanilla extract if using. Mix well to evenly distribute.
  5. Using a dropper or small spoon, carefully fill silicone gummy molds with the mixture. Work quickly before gelatin starts to set.
  6. Place molds in the refrigerator for at least 1 hour, or until gummies are firm to the touch. Avoid freezing.
  7. Gently pop gummies out of molds and transfer to an airtight container. Store in the fridge for up to 2 weeks.
