  • 8 oz burrata cheese
  • 1/4 cup high-quality balsamic vinegar
  • 2 tablespoons honey
  • 1/4 cup packed fresh basil leaves
  • 2 tablespoons extra-virgin olive oil
  • Flaky sea salt (e.g., Maldon)
  • Freshly cracked black pepper
  • 810 wooden or metal skewers (soak wooden ones in water for 30 minutes)

Instructions

  1. Make the honey balsamic glaze: In a small saucepan, combine 1/4 cup balsamic vinegar and 2 tablespoons honey. Bring to a gentle simmer over medium heat, then reduce heat to low. Let bubble for 5-7 minutes, stirring occasionally, until reduced by half and coats the back of a spoon. Remove from heat and set aside.
  2. Prep the peaches: Wash and dry peaches. Cut each in half, remove the pit, then cut each half into 4 wedges (roughly equal size).
  3. Assemble the skewers: Gently tear burrata into walnut-sized pieces. Thread a peach wedge onto a skewer, followed by a piece of burrata, then another peach wedge. Repeat for remaining skewers (8-10 total).
  4. Brush with olive oil: Lightly brush each exposed side of the peach wedges with olive oil. Do not brush the burrata directly.
  5. Preheat the grill: Heat grill to medium-high (400-450°F / 200-230°C). Clean grates and lightly oil them.
  6. Grill the skewers: Place skewers on hot grill. Cook for 2-3 minutes per side without moving, until peaches have grill marks and are slightly softened. Use tongs to flip carefully.
  7. Arrange and finish: Transfer skewers to a serving platter. Drizzle with honey balsamic glaze. Sprinkle with fresh basil, flaky sea salt, and black pepper. Serve immediately.

Notes

For best results, use ripe but firm peaches so they hold up on the grill. Take burrata out of the fridge 20 minutes before grilling for optimal texture. The glaze can be made up to a week in advance and stored in the fridge. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
