  • 1 cup (200g) granulated sugar

  • 2 tbsp (16g) cornstarch
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Colored sugar or sprinkles (optional, for decorating)
  • Royal icing or simple glaze (powdered sugar, milk, vanilla, optional)
  • White chocolate chips (optional, for drizzling)

Instructions

  1. Take out the butter and cream cheese about an hour before baking so they’re nice and soft. If your egg is cold, set it in a bowl of warm water for 5 minutes.
  2. In a large bowl, beat unsalted butter and cream cheese until smooth and creamy (about 2 minutes with an electric mixer). Add granulated sugar and beat until light and fluffy (another 1-2 minutes). Mix in egg and vanilla extract until pale and thick.
  3. In a separate bowl, whisk together gluten free all-purpose flour blend, cornstarch, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, beating on low after each addition. Scrape down the sides with a spatula to get everything incorporated. The dough will be soft but not sticky—if it’s too sticky, add 1-2 tbsp extra flour.
  5. Cover the dough and refrigerate for at least 30 minutes (or up to 24 hours).
  6. Preheat oven to 350°F (175°C). Line cookie sheets with parchment paper.
  7. On a lightly floured surface (use gluten free flour), roll dough to about 1/4 inch thick. Cut out shapes with cookie cutters. Transfer cookies to the baking sheet, spacing about 2 inches apart.
  8. Bake for 8-10 minutes, until cookies are set but not browned. They’ll puff slightly and edges may look just barely golden.
  9. Let cookies sit on the tray for 2 minutes, then transfer to a wire rack to cool completely.
  10. Once cooled, decorate with colored sugar, drizzle with melted white chocolate, or frost with your favorite icing as desired.
