  • 1 cup orzo
  • 8 ounces smoked sausage, sliced into rounds
  • 3 cloves garlic, freshly minced
  • 2 tablespoons unsalted butter
  • 2 cups chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh baby spinach
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional: Crushed red pepper flakes

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 4-5 minutes. Remove the sausage and set aside.
  2. Reduce the heat to medium-low and add 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook until fragrant, about 1 minute.
  3. Stir the orzo into the skillet, coating it in the butter and garlic. Toast for 1-2 minutes to enhance its nutty flavor.
  4. Pour in the chicken broth, bring to a boil, then reduce the heat to a simmer. Cover and cook for 8-10 minutes, stirring occasionally, until the orzo is tender and creamy.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  6. Return the sausage to the skillet and stir to combine. Add the grated Parmesan cheese and mix until melted and creamy.
  7. Taste and adjust the seasoning with salt, pepper, and optional red pepper flakes. Serve hot and enjoy!

Notes

Toast the orzo in butter for added nuttiness. Use freshly grated Parmesan for better melting and flavor. Adjust spice level with red pepper flakes.
