A bright, fresh, and zesty peach salsa combining juicy peaches, spicy jalapeño, and tangy lime juice. Perfect as a snack or paired with grilled chicken and fish tacos.

Ingredients

  • 3 medium ripe peaches, diced
  • 1 small jalapeño, finely minced (seeds removed for less heat)
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 large lime (about 2 tablespoons)
  • 1/2 teaspoon salt, or to taste
  • Pinch of black pepper (optional)
  • 1 teaspoon honey or agave syrup (optional)

Instructions

  1. Wash and dry the peaches.
  2. Dice the peaches into roughly 1/2-inch pieces.
  3. Cut the jalapeño in half lengthwise, remove seeds if desired, and finely chop.
  4. Finely chop the red onion.
  5. Roughly chop the fresh cilantro.
  6. In a medium bowl, gently toss the diced peaches, jalapeño, red onion, and cilantro.
  7. Add lime juice, salt, black pepper, and honey or agave syrup if using.
  8. Mix gently to combine without mashing the peaches.
  9. Let the salsa rest for 10-15 minutes at room temperature or in the fridge to allow flavors to meld.
  10. Taste and adjust seasoning before serving.

Notes

Use firm but ripe peaches to avoid mushy salsa. Remove jalapeño seeds for less heat. Letting the salsa rest enhances flavor melding. Can substitute red onion with green onion or shallots. For a smoky twist, roast jalapeño before chopping. Store leftovers in an airtight container in the fridge for up to 3 days. Do not freeze.
