Fresh Watermelon Mint Agua Fresca

A simple, refreshing, and cooling summer drink made with fresh watermelon, mint, lime juice, and water. Perfect for hot days and easy to prepare in under 10 minutes.

  • 6 cups (900g) fresh seedless watermelon cubes
  • 1/4 cup fresh mint leaves (about 1012 leaves), bruised
  • 2 tablespoons fresh lime juice (about 1 large lime)
  • 2 cups (16 fl oz) cold water, chilled
  • 12 tablespoons honey, agave syrup, or simple syrup (optional)

Instructions

  1. Cut about 1 small to medium seedless watermelon into roughly 6 cups (900g) of cubes, removing rind and seeds if any.
  2. Place 1/4 cup fresh mint leaves in the palm of your hand and gently crush them with your fingers to release their aroma and oils.
  3. In a blender, combine the watermelon cubes, bruised mint leaves, 2 tablespoons fresh lime juice, and 2 cups cold water. Blend on high for 30-45 seconds until smooth.
  4. Optional: Pour the blended mixture through a fine mesh strainer into a pitcher to remove pulp and mint bits, pressing gently with a spatula.
  5. Taste and stir in 1-2 tablespoons honey, agave syrup, or simple syrup if additional sweetness is desired.
  6. Refrigerate for at least 30 minutes to chill and let flavors meld. Serve over ice with a mint sprig or lime wedge garnish.

Notes

Do not over-blend the mint to avoid bitterness. Straining is optional but recommended for a smooth texture. Use ripe watermelon for best flavor. Sweetener is optional depending on watermelon sweetness. For a bubbly version, replace half the water with sparkling water before serving. Store in the fridge up to 2 days and stir before serving due to natural separation.
