A quick and refreshing summer salad combining sweet watermelon, salty feta, fresh mint, and a tangy balsamic reduction. Perfect for warm evenings and easy to prepare in about 5 minutes.

  • 4 cups seedless watermelon, cubed (about 600 grams)
  • 1 cup feta cheese, crumbled (about 150 grams)
  • 1/4 cup fresh mint leaves, roughly chopped (about 10 grams)
  • 3 tablespoons balsamic reduction
  • 1 tablespoon extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Pinch of sea salt (optional)

Instructions

  1. Cut seedless watermelon into roughly 1-inch cubes (about 4 cups or 600 grams) and transfer to a large mixing bowl.
  2. Crumble 1 cup (about 150 grams) of feta cheese over the watermelon.
  3. Roughly chop 1/4 cup fresh spearmint leaves (about 10 grams) and sprinkle into the bowl.
  4. Pour 1 tablespoon (15 ml) of extra virgin olive oil over the salad.
  5. Drizzle 3 tablespoons (45 ml) of balsamic reduction evenly over the ingredients.
  6. Add freshly ground black pepper to taste (about 1/4 teaspoon) and a pinch of sea salt if needed. Toss gently but thoroughly to combine without breaking the watermelon cubes.
  7. Serve immediately or chill for 10-15 minutes to let flavors meld. Avoid long refrigeration to prevent sogginess.

Notes

Use ripe, seedless watermelon for best sweetness. Crumble block feta for better texture. Use spearmint for a mild fresh flavor. Prepare balsamic reduction by simmering balsamic vinegar until syrupy. Toss gently to avoid watery salad. Can substitute goat cheese or plant-based feta for vegan option. Basil or cilantro can replace mint with different flavor.
