A refreshing and easy appetizer combining sweet watermelon, salty feta, and fresh mint for a perfect summer bite. Quick to prepare and ideal for parties or light snacking.

  • 4 cups firm, seedless watermelon, cut into 1-inch cubes
  • 1 cup crumbled feta cheese
  • 2 tablespoons finely chopped fresh mint leaves, plus whole leaves for garnish
  • 1 tablespoon extra virgin olive oil
  • Pinch of freshly ground black pepper (optional)
  • Light sprinkle of sea salt or flaky salt
  • 1 teaspoon balsamic glaze (optional)

Instructions

  1. Slice the watermelon into about 1-inch cubes using a sharp knife for clean cuts.
  2. Crumble 1 cup of feta cheese into small, bite-sized chunks.
  3. Finely chop 2 tablespoons of fresh mint leaves.
  4. Gently toss the watermelon cubes, feta crumbles, and chopped mint in a medium mixing bowl.
  5. Drizzle 1 tablespoon of extra virgin olive oil over the mixture, add a light sprinkle of flaky salt, and freshly ground black pepper to taste. Toss gently again.
  6. Optionally, drizzle 1 teaspoon of balsamic glaze over the top just before serving.
  7. Transfer the mixture to a serving platter or thread watermelon, feta, and mint onto small skewers or toothpicks for easy grabbing. Serve immediately.

Notes

Keep watermelon chilled before serving to maintain crunch. Assemble just before serving to avoid soggy feta and wilted mint. For dairy-free, substitute feta with marinated tofu or almond-based cheese. If watermelon is too juicy, drain cubes in a colander for 5 minutes before assembling. Fresh mint is key for brightness; basil can be used as a substitute.
