Fresh Turkey Club Bento Box Recipe with Easy Sweet Fruit Kabobs

  • 46 oz fresh sliced turkey breast
  • 4 slices whole wheat sandwich bread, toasted
  • 4 leaves leafy Romaine or butter lettuce
  • 4 slices ripe tomato
  • 4 strips crispy cooked bacon (optional)
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 8 medium fresh strawberries, hulled and halved if large
  • 16 seedless green grapes, washed and dried
  • 1 cup pineapple chunks (about 5.3 oz), fresh or canned in juice, drained
  • 2 kiwis, peeled and cut into thick rounds
  • Wooden skewers or reusable metal picks

Instructions

  1. Toast four slices of whole wheat bread until golden and crisp (3-4 minutes).
  2. While bread is toasting, wash and dry strawberries, grapes, pineapple chunks, and kiwi slices. Thread fruit onto skewers alternating strawberry, grape, pineapple, and kiwi. Chill in fridge.
  3. If using bacon, cook strips until crisp in skillet or oven (8-10 minutes). Drain on paper towels.
  4. Spread about 1/2 tablespoon mayonnaise on two slices of toasted bread. Spread a thin layer of Dijon mustard on the other two slices.
  5. Layer turkey slices evenly over the mayo, then add bacon (if using), lettuce leaves, and tomato slices. Top with mustard-spread bread slices, mustard side down.
  6. Cut each sandwich diagonally into halves or quarters to fit the bento box.
  7. Place sandwich pieces in one compartment of the bento box. Arrange fruit kabobs in another compartment. Optionally add a small handful of baby carrots or snap peas.
  8. Keep the bento box chilled until ready to eat.

Notes

Toast bread just enough to create a moisture barrier to prevent sogginess. Layer lettuce between turkey and tomato to keep bread dry. Assemble fruit kabobs shortly before serving or drizzle lemon juice on kiwi to prevent browning. Keep bento box chilled until eating. For gluten-free, use certified gluten-free bread or lettuce wraps. For dairy-free, use dairy-free mayo or yogurt-based spread.
