A fun and refreshing star-shaped watermelon fruit pizza topped with creamy yogurt frosting and fresh fruit, perfect for a healthy snack or light dessert.

  • 1 large seedless watermelon, chilled
  • 1 cup Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 kiwi, peeled and sliced
  • 1/2 cup blackberries or raspberries
  • Fresh mint leaves for garnish
  • Optional: toasted coconut flakes, chopped pistachios, or chia seeds

Instructions

  1. Chill the seedless watermelon in the fridge for at least 2 hours before starting.
  2. Slice the watermelon crosswise into 1-inch thick rounds.
  3. Press a star-shaped cookie cutter firmly into a watermelon slice and remove the excess watermelon to create a star shape. Alternatively, freehand cut a star shape.
  4. In a mixing bowl, whisk together Greek yogurt, honey or maple syrup, and vanilla extract until smooth and glossy.
  5. Spread an even 1/4 inch thick layer of yogurt frosting over the watermelon star using a spatula or spoon.
  6. Arrange sliced strawberries, blueberries, kiwi slices, and blackberries on top of the yogurt layer. Garnish with fresh mint leaves.
  7. Optionally, sprinkle toasted coconut flakes, chopped pistachios, or chia seeds on top for extra texture and nutrition.
  8. Serve immediately or refrigerate covered for up to 2 hours before serving.

Notes

Chill the watermelon before cutting for easier slicing. Pat watermelon surface dry with paper towel before spreading yogurt to prevent sogginess. Best served fresh or within 2 hours refrigerated. Use dairy-free yogurt and maple syrup for vegan version. Use a serrated knife if available for easier cutting.
