  • 1 pound strawberries, hulled and halved if large
  • 2 cups pineapple, cut into 1-inch chunks
  • 34 firm but ripe kiwis, peeled and cut into 1-inch chunks
  • 1 cup blueberries
  • 1 cup seedless red grapes
  • 1 cup mandarin orange segments or mango chunks
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 23 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest (optional)

Instructions

  1. Wash all fruit thoroughly and pat dry with a clean towel.
  2. Hull strawberries and halve if large. Peel and chop kiwi and pineapple into 1-inch chunks. Leave blueberries and grapes whole. If using mango, peel and cube.
  3. In a small mixing bowl, combine Greek yogurt, honey, vanilla extract, and lemon zest. Whisk until smooth and creamy. Taste and adjust sweetness if needed. Cover and refrigerate while assembling kabobs.
  4. Thread fruit onto wooden or bamboo skewers in a color pattern: red (strawberry), orange (mandarin or mango), yellow (pineapple), green (kiwi), blue (blueberry), purple (grape). Leave about 1 inch at the bottom of the skewer for handling.
  5. Push fruit gently onto skewers, leaving a tiny gap between pieces. For smaller fruits like blueberries, thread 2-3 at a time.
  6. Arrange finished kabobs on a serving platter. Pour yogurt dip into a small bowl and place in the center. Serve immediately.

Notes
