A quick and easy deviled eggs recipe that tastes like an everything bagel with creamy avocado filling, perfect for a savory snack or appetizer.

  • 6 large eggs, hard-boiled and peeled
  • 1/2 ripe avocado (about 70 grams), mashed
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • Everything bagel seasoning (sesame seeds, poppy seeds, garlic, onion, salt), for topping
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Place 6 large eggs in a medium saucepan and cover with cold water by about an inch. Bring to a boil over medium-high heat, then cover, turn off the heat, and let sit for 12 minutes.
  2. Drain and transfer eggs to a bowl of ice water for 5 minutes to stop cooking and make peeling easier.
  3. Gently tap each egg on the counter and peel off the shell. Slice each egg in half lengthwise. Carefully scoop out the yolks into a bowl and set the whites aside on a serving plate.
  4. Mash the yolks with a fork until crumbly. Add half a ripe avocado (about 70 grams), 2 tablespoons mayonnaise, 1 teaspoon Dijon mustard, and 1 teaspoon fresh lemon juice. Mix until smooth but still slightly textured. Season with salt and pepper to taste.
  5. Spoon or pipe the avocado yolk mixture into each egg white half, dividing evenly.
  6. Sprinkle everything bagel seasoning generously over each filled egg.
  7. Chill the eggs in the refrigerator for at least 10 minutes before serving.

Notes

If avocado is too ripe and mushy, add more mayonnaise or a pinch of lemon juice to balance texture. Cracking eggs gently under running water helps with peeling. Use a piping bag for a fancy presentation or a spoon for casual serving. Everything bagel seasoning saltiness varies, so taste before adding extra salt.
