  • 1 small clove garlic, minced (optional)
  • Salt and freshly cracked black pepper, to taste
  • Optional: 2 tablespoons toasted pine nuts or slivered almonds
  • Optional: crumbled feta cheese

Instructions

  1. Wash and peel the carrots. Using a vegetable peeler, shave the carrots lengthwise into long, thin ribbons about 1/8 inch thick, discarding any tough ends.
  2. In a small bowl, whisk together lemon juice, olive oil, honey, minced garlic (if using), salt, and pepper until emulsified and slightly creamy.
  3. Finely chop fresh parsley and chives.
  4. Place carrot ribbons in a medium mixing bowl. Pour the vinaigrette over the carrots and sprinkle in the chopped herbs. Gently toss to coat evenly.
  5. Adjust seasoning with additional salt, pepper, or lemon juice as needed.
  6. If desired, sprinkle toasted pine nuts or slivered almonds on top for crunch.
  7. Let the salad rest at room temperature for 5-10 minutes to allow flavors to meld before serving.
