Fresh Caprese skewers combine ripe tomatoes, fresh basil, and creamy mozzarella balls drizzled with a balsamic glaze for a quick, easy, and crowd-pleasing appetizer perfect for any occasion.

Ingredients

  • 20 cherry or grape tomatoes, halved if large
  • 20 small fresh mozzarella balls (Bocconcini or Ciliegine), drained
  • 20 fresh basil leaves, washed and patted dry
  • 1/4 cup balsamic glaze or reduction
  • 2 tablespoons extra virgin olive oil
  • Pinch of sea salt
  • Freshly ground black pepper to taste
  • About 20 wooden skewers or toothpicks

Instructions

  1. Rinse and dry the basil leaves carefully to avoid bruising. Halve the cherry tomatoes if they are large. Drain the mozzarella balls well to prevent excess moisture.
  2. In a mixing bowl, gently toss the tomatoes, mozzarella, and basil with extra virgin olive oil, sea salt, and freshly ground black pepper.
  3. Take a wooden skewer or toothpick and thread one tomato half (cut side down), followed by a folded basil leaf, then a mozzarella ball, and finish with another tomato half. If using prosciutto, fold a small slice and add it between the mozzarella and basil.
  4. Arrange the skewers neatly on a serving platter. Drizzle the balsamic glaze over the skewers just before serving.
  5. Sprinkle a tiny pinch of sea salt and freshly ground black pepper on top for contrast and to brighten the flavors. Serve immediately or keep chilled for up to 2 hours before serving.

Notes

Pat ingredients dry to avoid sogginess. Add balsamic glaze just before serving. For a twist, add prosciutto or grill skewers lightly for 2-3 minutes per side. Store skewers covered in the refrigerator up to 2 days without glaze.
