  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (150 grams) granulated sugar
  • 6 tablespoons (85 grams) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1/2 cup (120 ml) sour cream
  • 1/2 cup (120 ml) whole milk, room temperature
  • 1 1/2 cups (225 grams) fresh blackberries, gently washed and patted dry
  • Zest of 1 large lemon
  • 1 teaspoon vanilla extract
  • 2 tablespoons turbinado sugar (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and granulated sugar until evenly combined.
  3. In a separate bowl, whisk the eggs until lightly frothy. Add melted butter, sour cream, milk, vanilla extract, and lemon zest. Whisk until smooth and glossy.
  4. Pour the wet ingredients into the dry ingredients. Gently fold with a rubber spatula until just combined; the batter should be lumpy with no large streaks of flour.
  5. Carefully fold in the fresh blackberries, trying not to crush them.
  6. Spoon the batter into the prepared muffin cups, filling each about 3/4 full. Sprinkle turbinado sugar on top if using.
  7. Bake for 18 to 22 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean or with moist crumbs.
  8. Remove muffins from the oven and let sit in the tin for 5 minutes. Transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to keep muffins tender. Use room temperature ingredients for best results. Toss frozen berries in flour before folding in to reduce bleeding. Let muffins cool completely before storing to avoid sogginess. Optional lemon glaze can be brushed on after cooling for extra brightness.
