  • 2 tablespoons honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries, washed and dried
  • 1 cup blackberries or raspberries
  • 1 ½ cups crunchy granola (store-bought or homemade)
  • Optional: ½ cup chopped nuts (almonds, pecans, or walnuts)
  • Optional toppings: shredded coconut, mini dark chocolate chips, fresh mint leaves

Instructions

  1. Prepare the Yogurt Base: In a large bowl, combine 2 cups of plain Greek yogurt with 2 tablespoons honey and 1 teaspoon vanilla extract. Stir gently until smooth and creamy. Taste and add a bit more honey if you prefer it sweeter.
  2. Wash and Prep the Berries: Rinse all berries under cold water and pat dry with paper towels. Hull and slice the strawberries to bite-sized pieces. Place all berries in separate bowls or one large bowl if you prefer to mix.
  3. Set Up the Parfait Bar: Arrange the yogurt, berries, granola, and optional toppings in separate bowls or jars. Make sure each item has its own serving spoon.
  4. Layering the Parfait: Encourage everyone to build their parfait starting with a spoonful of the yogurt base, followed by a layer of berries, then a sprinkle of crunchy granola. Repeat layers until the jar or bowl is full, finishing with a sprinkle of granola or a few mint leaves for garnish.
  5. Serving: Serve immediately for the best crunch from the granola. If prepping ahead, keep granola separate and add just before serving to avoid sogginess.

Notes

For dairy-free versions, swap Greek yogurt with coconut or almond milk yogurt. Use frozen berries thawed and drained if fresh berries are not available.
