  • 1/2 cup (75 grams) frozen mixed berries
  • 1 ripe banana, peeled
  • 1/3 cup (80 ml) unsweetened almond milk
  • 1 medium dragon fruit, peeled and cubed
  • 2 tablespoons unsweetened toasted coconut flakes
  • 1 teaspoon chia seeds (optional)
  • 1 teaspoon honey or agave syrup (optional)

Instructions

  1. Prepare the toppings first: Peel and cube the dragon fruit into 1/2-inch pieces. Toast coconut flakes in a dry skillet over medium heat for 2-3 minutes, stirring often until golden and fragrant. Set aside to cool.
  2. In a high-speed blender, combine frozen acai puree, frozen mixed berries, ripe banana, and almond milk. Add chia seeds and honey if using. Blend on high until smooth and creamy, about 1-2 minutes. Add more almond milk 1 tablespoon at a time if needed to reach desired consistency.
  3. Check the texture to ensure it is thick enough to hold toppings without sinking but smooth enough to eat with a spoon, similar to soft-serve ice cream.
  4. Pour the acai mixture into a serving bowl. Arrange dragon fruit cubes and toasted coconut flakes on top. Optionally, sprinkle extra berries or granola.
  5. Serve immediately for best texture and flavor.

Keep frozen fruit frozen until blending to maintain cold, creamy texture. Toast coconut flakes carefully to avoid burning. You can prep coconut flakes a day ahead and store in an airtight container.
