Ingredients

Scale
  • 4 cups all-purpose flour (unbleached preferred)
  • 2 1/4 teaspoons active dry yeast (one packet)
  • 1 cup warm whole milk (about 110°F/43°C)
  • 1/2 cup buttermilk, room temperature
  • 6 tablespoons unsalted butter, melted + extra for brushing
  • 1/4 cup honey (mild floral flavor)
  • 1/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, softened (for cinnamon honey butter)
  • 1/4 cup honey (for cinnamon honey butter)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of salt (for cinnamon honey butter)

Instructions

  1. Warm the milk to about 110°F (43°C). Stir in the yeast and 1 teaspoon sugar. Let sit for 5–10 minutes until foamy.
  2. In a large bowl, combine buttermilk, melted butter, honey, eggs, and salt. Whisk gently until combined.
  3. Add the activated yeast mixture to the wet ingredients and stir gently.
  4. Gradually add flour, about 1 cup at a time, mixing after each addition. Knead the dough for 6–8 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm spot for 1 to 1.5 hours until doubled in size.
  6. Punch down dough and divide into 12 equal pieces. Shape each into a smooth ball.
  7. Arrange rolls in a greased 9-inch round pan or baking sheet. Cover and let rise for 30–45 minutes until puffy.
  8. Preheat oven to 350°F (175°C). Bake rolls for 20–25 minutes until golden brown and a toothpick comes out clean.
  9. Brush hot rolls immediately with melted butter.
  10. Mix softened butter, honey, cinnamon, vanilla, and salt until smooth to make cinnamon honey butter.
  11. Serve rolls warm with cinnamon honey butter spread.

Notes

Use room temperature ingredients for best results. Avoid overheating milk to preserve yeast activity. Knead gently to keep rolls soft. Brush rolls with melted butter immediately after baking to keep crust tender. For dairy-free, substitute milk and buttermilk with almond or oat milk plus apple cider vinegar. For gluten-free, use a gluten-free flour blend with xanthan gum.
