  • 1/2 cup (120ml) fresh strawberry puree
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 8-inch (or 9-inch) round cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the butter and sugar with a mixer until light and fluffy, about 3-5 minutes. Scrape down the sides as needed.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Reduce the mixer speed to low and alternate adding the dry ingredients and milk, starting and ending with the dry ingredients. Mix just until combined—don’t overmix!
  6. Gently fold in the strawberry puree using a rubber spatula. The batter should be light and slightly pink.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a cooling rack.
  9. While the cakes cool, make the frosting. Beat the butter until creamy, then gradually add the powdered sugar. Stir in the strawberry puree, vanilla, and salt. Mix until smooth.
  10. Once cakes are completely cool, spread a layer of frosting on one cake, stack the second cake on top, and frost the sides and top. Decorate with fresh strawberries and mint leaves if desired.
