Ingredients

Scale
  • 1 1/2 cups (190 grams) all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup (50 grams) granulated sugar
  • 1 1/4 cups (300 ml) buttermilk
  • 1 large egg, room temperature
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 12 tablespoons red gel food coloring
  • For the cream cheese drizzle:
  • 4 ounces (115 grams) cream cheese, softened
  • 1 cup (120 grams) powdered sugar
  • 23 tablespoons milk (dairy or dairy-free)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and granulated sugar until well combined.
  2. Combine Wet Ingredients: In a separate bowl, whisk buttermilk, egg, melted butter, vanilla extract, and red gel food coloring until bright and smooth.
  3. Fold Wet Into Dry: Pour wet ingredients into dry ingredients and gently fold with a spatula until just combined with some lumps remaining; do not overmix.
  4. Heat the Skillet: Warm a non-stick skillet or griddle over medium heat until water droplets dance and evaporate quickly.
  5. Cook Pancakes: Lightly grease skillet. Pour 1/4 cup batter per pancake. Cook 2-3 minutes until bubbles form and edges set. Flip and cook 1-2 minutes more until cooked through. Avoid pressing pancakes.
  6. Make the Cream Cheese Drizzle: Beat softened cream cheese with powdered sugar, milk, and vanilla extract until smooth and pourable. Add more milk if needed.
  7. Serve: Stack pancakes, drizzle generously with cream cheese sauce, and enjoy warm.

Notes

Do not overmix the batter to keep pancakes fluffy. Use gel food coloring to avoid thinning the batter. Keep pancakes warm in a 200°F oven if cooking in batches. Make cream cheese drizzle fresh for best texture. Flip pancakes only once.
