  • 23 lbs pork shoulder (pork butt)
  • ⅓ cup honey (113g)
  • 23 chipotle peppers in adobo sauce
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 tbsp apple cider vinegar
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • Salt to taste
  • ½ tsp freshly ground black pepper
  • 12 small slider buns
  • Creamy coleslaw (optional)

Instructions

  1. Trim excess fat from the pork shoulder, leaving some for moisture and flavor. Pat dry with paper towels. (5 minutes)
  2. In a bowl, combine honey, chopped chipotle peppers with 1 tablespoon of their adobo sauce, minced garlic, finely chopped onion, apple cider vinegar, tomato paste, smoked paprika, ground cumin, salt, and black pepper. Stir until smooth. (5 minutes)
  3. Place the pork shoulder in the slow cooker and pour the honey chipotle sauce evenly over the top, coating the meat well but not swimming in liquid. (2 minutes)
  4. Cover and cook on LOW for 6 to 8 hours, or until the pork is fork-tender and easily shreds. Avoid lifting the lid during cooking. (6-8 hours)
  5. Remove the pork from the slow cooker and shred it using two forks into bite-sized pieces. (5-7 minutes)
  6. Pour some of the cooking juices and sauce back over the shredded pork and toss gently to coat. (2 minutes)
  7. Warm the slider buns briefly in the oven or microwave, then pile the pulled pork onto each bun. Add a spoonful of creamy coleslaw if using. (5 minutes)
  8. Serve immediately while warm. Optionally, broil assembled sliders for 2 minutes for a caramelized finish.

Notes

Do not trim all the fat from the pork shoulder to keep the meat juicy. Avoid lifting the slow cooker lid during cooking to maintain temperature. For a gluten-free option, use gluten-free rolls or lettuce wraps instead of slider buns. Broil sliders for 2 minutes for a caramelized finish if desired. Save some cooking liquid to drizzle on the pork to keep it moist.
