Instructions

  1. Heat the vegetable oil in a large heavy-bottomed pot over medium-high heat. Drop in 3 kernels and cover with the lid. When they pop, add the remaining 1/2 cup (120 g) kernels in an even layer. Cover and remove from heat for 30 seconds to help kernels reach popping temperature simultaneously.
  2. Return pot to heat and gently shake occasionally. When popping slows to 2-3 seconds between pops, remove from heat. Transfer popcorn to a large bowl and discard any un-popped kernels. (Approx. 5-7 minutes)
  3. Once cooled slightly, divide the popcorn evenly into six separate bowls for seasoning.
  4. Prepare savory mixes: Toss popcorn in one bowl with 2 tablespoons melted butter, 1 teaspoon garlic powder, 1/4 cup grated Parmesan, and a pinch of sea salt. In another bowl, mix popcorn with 1 teaspoon smoked paprika, 1 tablespoon melted butter, and a sprinkle of sea salt. For chili lime flavor, combine 1 teaspoon chili powder, zest of 1 lime, 2 tablespoons melted butter, and salt to taste.
  5. Prepare sweet mixes: For cinnamon sugar, mix 2 tablespoons brown sugar with 2 teaspoons cinnamon and toss with 2 tablespoons melted butter. For maple cinnamon popcorn, drizzle 2 tablespoons maple syrup over popcorn, then sprinkle lightly with cinnamon and powdered sugar after mixing. For chocolate chip version, gently stir mini chocolate chips into plain popcorn with a light dusting of powdered sugar; optionally add a pinch of sea salt flakes for salted chocolate effect.
  6. Spread each flavored popcorn on parchment-lined baking sheets to cool and set the coatings for about 10-15 minutes to prevent clumping and let flavors meld.
