  • 1 pound (450g) large shrimp, peeled and deveined
  • Wooden or metal skewers (if using wooden, soak in water for 30 minutes to prevent burning)
  • 4 tablespoons (60g) unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Optional: 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Rinse the shrimp under cold water and pat dry thoroughly with paper towels.
  2. In a mixing bowl, combine melted butter, minced garlic, lemon juice, smoked paprika, salt, and pepper. Stir well to blend all flavors and set aside.
  3. Carefully thread 4-5 shrimp onto each skewer, piercing through the tail and the thick part near the head to keep them secure. Leave a small gap between each shrimp.
  4. Preheat the grill to medium-high (about 375°F/190°C). Brush the grates with oil to prevent sticking.
  5. Place skewers on the grill and cook for about 2-3 minutes per side, brushing generously with the garlic butter glaze after flipping. Shrimp should turn pink and opaque with slight grill marks.
  6. After the last flip, brush one more layer of the garlic butter glaze. Remove from the grill and sprinkle with chopped parsley if using. Serve immediately.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Dry shrimp thoroughly to avoid steaming. Brush shrimp multiple times with garlic butter glaze during grilling to keep moist. Avoid overcooking shrimp to prevent rubbery texture. If flare-ups occur, move skewers to cooler part of grill. Let shrimp rest for a minute off heat before serving.
