  • 4 ripe but firm peaches, halved and pitted
  • 2 tablespoons olive oil or melted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon (optional)
  • 1 teaspoon vanilla extract
  • About 2 cups vanilla ice cream
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat the grill to medium-high heat, about 375°F (190°C).
  2. Brush each peach half with olive oil or melted butter mixed with vanilla extract, coating the cut side well.
  3. Lightly sprinkle the cut sides of the peaches with brown sugar and cinnamon.
  4. Place peaches cut side down on the grill and cook for 3-4 minutes without moving them to develop grill marks.
  5. Flip the peaches carefully using tongs and grill the skin side for another 3 minutes until softened and warmed through.
  6. Remove peaches from the grill and let them rest for a couple of minutes.
  7. Serve warm peaches topped with a generous scoop of vanilla ice cream and garnish with fresh mint leaves if desired.

Notes

Use firm peaches to keep their shape on the grill. Lightly oil grill grates to prevent sticking. Watch peaches carefully near the end to avoid burning the sugar. Serve immediately with ice cream for best contrast of warm and cold. For dairy-free options, substitute butter with coconut oil and vanilla ice cream with coconut milk ice cream.
