  • Black pepper, freshly cracked, to taste
  • 1 teaspoon garlic powder (optional)
  • ½ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons ketchup
  • 1 tablespoon pickle relish (sweet or dill)
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Dash of hot sauce (optional)
  • 46 brioche burger buns, sliced and lightly toasted
  • 46 cheddar cheese slices (or Swiss or pepper jack)
  • Leaf lettuce, washed and dried
  • Tomato slices, ripe and firm
  • Red onion slices, thinly cut
  • Dill pickle slices
  • Avocado slices (optional)
  • Bacon strips, cooked crispy (optional)

Instructions

  1. Make the Special Sauce (5 minutes): In a small bowl, combine mayonnaise, Dijon mustard, ketchup, pickle relish, apple cider vinegar, smoked paprika, garlic powder, onion powder, and hot sauce if using. Stir well until smooth. Taste and adjust seasoning if needed. Cover and refrigerate to let flavors meld while you prep the burgers.
  2. Form the Burger Patties (10 minutes): Place ground beef in a bowl and gently mix with salt, pepper, and garlic powder. Avoid overworking the meat to keep patties tender. Divide into 4-6 equal portions (about 6 ounces each). Shape each portion into a round patty, about ¾ inch thick, making a slight indentation in the center with your thumb to prevent puffing during cooking.
  3. Preheat the Grill (10 minutes): Heat your grill to medium-high (around 400°F). Clean and oil the grates lightly to prevent sticking.
  4. Grill the Burgers (8-12 minutes): Place patties on the hot grill. Cook for about 4-5 minutes on one side without pressing down. Flip carefully and top each patty with a slice of cheese. Grill another 4-5 minutes for medium doneness (internal temp 160°F). Adjust time if you prefer more or less cooked. Use a meat thermometer if you’re unsure.
  5. Toast the Buns (2-3 minutes): While burgers cook, place buns cut-side down on the cooler part of the grill until golden and slightly crisp.
  6. Assemble the Burgers: Spread a generous layer of special sauce on the bottom bun. Add lettuce, tomato, and the grilled burger with melted cheese. Top with onion, pickles, avocado, and bacon if using. Finish with more special sauce on the top bun and crown your creation.

Notes

Let patties rest for a couple of minutes after grilling to lock in juices. Avoid pressing patties while cooking to keep them juicy. Let patties sit at room temperature for 15-20 minutes before grilling for even cooking. The special sauce tastes better after chilling for at least an hour. Use gluten-free buns or lettuce leaves for gluten-free option. For vegan version, swap mayo for vegan mayo and use plant-based patties.
