  • 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
  • Juice of 2 medium lemons (about 1/4 cup or 60 ml)
  • Zest of 1 lemon
  • 4 cloves garlic, minced
  • 1/4 cup (60 ml) extra virgin olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Wooden or metal skewers

Instructions

  1. Trim any excess fat from the chicken thighs and cut into 1-inch cubes.
  2. In a large bowl, combine lemon juice, lemon zest, minced garlic, olive oil, dried oregano, salt, black pepper, and optional red pepper flakes. Whisk until well blended.
  3. Add the chicken cubes to the marinade. Toss gently to coat all pieces. Cover and refrigerate for at least 30 minutes, ideally 1-2 hours.
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  5. Remove chicken from marinade, letting excess drip off. Thread the pieces onto skewers, leaving space between each piece.
  6. Preheat grill or grill pan over medium-high heat until hot.
  7. Place skewers on the grill and cook for 4-5 minutes per side, turning once, until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Transfer skewers to a plate and let rest for 3-5 minutes before serving.

Notes

Marinate chicken for at least 30 minutes but no longer than 2 hours to avoid mushy texture. Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Use a meat thermometer to ensure chicken reaches 165°F (74°C). Let skewers rest after grilling to keep them juicy. If no grill is available, use a broiler or stovetop grill pan.
