  • 1 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 cup Greek yogurt (e.g., Fage or Chobani)
  • 1/2 English cucumber, grated and excess water squeezed out
  • 1 tablespoon fresh dill, finely chopped (or substitute with mint)
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • Salt to taste
  • 46 soft pita breads (whole wheat or traditional white, warmed)
  • Fresh veggies like sliced tomatoes, red onions, or bell peppers (optional)
  • Olives or feta cheese for garnish (optional)

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, smoked paprika (if using), salt, and pepper.
  2. Pat chicken breasts dry and add to the marinade. Toss gently to coat all sides. Cover and refrigerate for at least 20 minutes, preferably 2 hours or overnight for deeper flavor.
  3. While chicken marinates, grate cucumber and squeeze out excess moisture using a clean kitchen towel.
  4. In a bowl, combine Greek yogurt, grated cucumber, chopped dill, minced garlic, lemon juice, and a pinch of salt. Mix well and refrigerate until ready to serve (at least 30 minutes).
  5. Preheat grill pan or oven to 400°F (200°C). If using oven, line a baking sheet with foil or parchment.
  6. Remove chicken from marinade and place on grill pan or baking sheet. Cook about 6 minutes per side or until internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.
  7. Warm pita bread in a dry skillet over medium heat for about 30 seconds per side or wrap in foil and heat in the oven for 5 minutes.
  8. Slice chicken into thin strips. In meal prep containers, layer pita bread, sliced chicken, a generous dollop of tzatziki, and fresh veggies if using. Garnish with olives or feta if desired.
  9. Seal containers and refrigerate for up to 4 days.

Marinate chicken for at least 20 minutes, preferably longer for better flavor. Squeeze cucumber well to avoid watery tzatziki. Rest chicken after cooking to keep it juicy. Warm pita before serving for best texture. Keep tzatziki separate when storing to avoid soggy pita.
