Ingredients

Scale
  • 3 lbs beef chuck roast or short ribs, trimmed of excess fat
  • 3 dried guajillo chilies, stems and seeds removed
  • 2 dried ancho chilies, stems and seeds removed
  • 1 chipotle pepper in adobo sauce
  • 4 garlic cloves
  • 1 medium onion, quartered
  • 2 Roma tomatoes, chopped
  • 2 cups beef broth
  • 2 tbsp apple cider vinegar
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 bay leaf
  • Salt and pepper, to taste
  • Corn tortillas
  • Shredded cheese (optional)
  • Chopped onion and fresh cilantro, for topping
  • Consommé (reserved from the beef)

Instructions

  1. Toast the guajillo and ancho chilies in a dry skillet over medium heat for 1-2 minutes until fragrant. Soak them in warm water for 20 minutes to soften.
  2. In a blender, combine the softened chilies, chipotle pepper, garlic, onion, tomatoes, apple cider vinegar, cumin, smoked paprika, oregano, and 1 cup of beef broth. Blend until smooth.
  3. Season the beef with salt and pepper. Heat a Dutch oven over medium-high heat and sear the beef on all sides until golden brown. Remove and set aside.
  4. Add the blended sauce to the pot, scraping up any browned bits. Return the beef to the pot and add the remaining beef broth and bay leaf. Cover and simmer on low heat for 3 hours or until the beef is fork-tender.
  5. Remove the beef from the pot and shred it using two forks. Reserve the consommé for dipping.
  6. Heat a skillet over medium heat. Dip a tortilla into the consommé, then place it into the skillet. Top with shredded beef and cheese, then fold the tortilla in half. Cook until crispy, flipping once.
  7. Garnish tacos with onion and cilantro. Serve with a side of consommé for dipping.
