This oven roasted BBQ chicken recipe brings the smoky, sweet flavors of outdoor grilling indoors with tender, juicy meat and a caramelized glaze.

Ingredients

  • Bone-in, skin-on chicken thighs and drumsticks
  • BBQ sauce
  • Olive oil
  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Brown sugar
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line your baking sheet with foil for easy cleanup. Place a wire rack on top if you have one.
  2. Pat the chicken pieces dry with paper towels to remove excess moisture—this helps the skin crisp up.
  3. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, brown sugar, salt, and pepper.
  4. Drizzle the chicken with olive oil and rub the spice mix evenly all over each piece. Make sure to get the seasoning under the skin for maximum flavor.
  5. Arrange the seasoned chicken on the wire rack, skin-side up, ensuring they don’t touch each other for even cooking.
  6. Roast the chicken in the oven for 25 minutes. Check halfway through to ensure the skin is crisping but not burning.
  7. After 25 minutes, remove the chicken from the oven and generously brush each piece with BBQ sauce. Return the chicken to the oven and roast for another 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
  8. For extra caramelization, broil the chicken on high for 2-3 minutes at the end of cooking. Keep a close eye to prevent burning!
  9. Let the chicken rest for 5 minutes before serving. This helps the juices redistribute and keeps the meat tender.

Notes

[‘Make sure the chicken is dry before seasoning to achieve crispy skin.’, ‘Apply BBQ sauce in the last stage of roasting to avoid burning and ensure a sticky glaze.’, ‘Use a meat thermometer to guarantee perfectly cooked chicken.’, ‘Broil for extra caramelization and charred flavor.’]
