  • 6 slices bacon, cooked and chopped
  • 8 oz (225 g) shredded cheddar cheese
  • 3/4 cup (90 g) breadcrumbs (or almond flour for gluten-free)
  • 1/3 cup (80 ml) milk (whole milk preferred)
  • 1 small onion, finely chopped
  • 2 large eggs, room temperature
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup (50 g) brown sugar
  • 1/3 cup (80 ml) BBQ sauce

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your loaf pan or baking dish lightly with butter or oil.
  2. Cook the bacon in a skillet over medium heat until crisp, about 8 minutes. Transfer to paper towels to drain, then chop into bite-sized pieces.
  3. In a large bowl, combine ground beef, breadcrumbs, finely chopped onion, eggs, milk, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently but thoroughly.
  4. Shape half of the meat mixture into a loaf shape in your pan, about 8 inches long and 4 inches wide.
  5. Sprinkle the cooked bacon evenly over the meat base, then layer shredded cheddar cheese on top, spreading to the edges.
  6. Cover the bacon and cheese with the remaining meat mixture, sealing the edges and smoothing the top.
  7. In a small bowl, mix brown sugar with BBQ sauce. Brush this glaze generously over the top of the meatloaf.
  8. Bake the meatloaf for 50-60 minutes. If the glaze browns too quickly, tent with foil after 40 minutes.
  9. Check doneness with a meat thermometer; internal temperature should reach 160°F (71°C).
  10. Let the meatloaf rest for 10 minutes before slicing to keep it juicy.

Notes

Do not overmix the meat to avoid toughness. Cook bacon until crisp before adding. Use room temperature eggs and milk for better binding. Seal edges well to keep filling inside. Tent with foil if glaze browns too fast. Let meatloaf rest 10 minutes before slicing to keep cheese molten but contained. For gluten-free, substitute breadcrumbs with almond flour. For leaner meatloaf, use turkey bacon and add an extra egg.
