A classic trio of delicate English tea sandwiches featuring cucumber & dill, egg salad, and smoked salmon & cream cheese, perfect for elegant gatherings and nostalgic teatime experiences.

Ingredients

  • White sandwich bread, crusts removed (soft and sturdy works best)
  • Cucumber, thinly sliced (seedless English cucumbers preferred)
  • Unsalted butter, softened
  • Fresh dill, finely chopped
  • Mayonnaise (Hellmann’s recommended)
  • Salt and freshly ground black pepper
  • Large eggs, hard-boiled and peeled (about 4 eggs for 8 sandwiches)
  • Dijon mustard
  • Fresh chives, finely chopped
  • White pepper
  • Smoked salmon slices (wild-caught if possible)
  • Cream cheese, softened (Philadelphia brand recommended)
  • Fresh lemon juice
  • Fresh dill sprigs for garnish
  • Capers (optional)

Instructions

  1. Prepare the Egg Salad (15 minutes): Place hard-boiled eggs in a bowl and mash gently with a fork until slightly chunky. Add 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 2 tablespoons finely chopped fresh chives, ½ teaspoon salt, and a pinch of white pepper. Mix until combined but not overly smooth. Adjust seasoning and set aside.
  2. Make the Cucumber & Dill Spread (5 minutes): In a small bowl, combine 2 tablespoons softened unsalted butter, 1 tablespoon mayonnaise, 2 tablespoons chopped fresh dill, and a pinch of salt and pepper. Stir until smooth and spreadable.
  3. Prepare the Smoked Salmon Spread (5 minutes): Mix 4 ounces cream cheese with 1 teaspoon fresh lemon juice until creamy. Optionally fold in a small handful of chopped capers.
  4. Assemble the Cucumber Sandwiches (10 minutes): Lightly butter one side of 4 slices of bread with the dill spread. Layer thin cucumber slices evenly on these slices. Top with remaining slices, dill spread side down. Press gently, trim crusts, and cut into rectangles or triangles.
  5. Assemble the Egg Salad Sandwiches (10 minutes): Spread a generous layer of egg salad on 4 slices of bread. Top with remaining slices, press gently, trim crusts, and cut into shapes.
  6. Assemble the Smoked Salmon Sandwiches (10 minutes): Spread lemon-cream cheese mixture evenly on 4 slices of bread. Layer smoked salmon slices on top, garnish with dill sprigs. Top with remaining bread slices, press gently, trim crusts, and cut.
  7. Chill and Serve: Wrap sandwiches in plastic wrap and refrigerate for at least 30 minutes before serving to meld flavors and firm up bread.

Notes

Use slightly stale bread for best texture. Pat cucumber slices dry to avoid sogginess. Chill sandwiches for at least 30 minutes before serving to firm bread and meld flavors. Use a sharp serrated knife for clean crust removal and cutting. Variations include swapping smoked salmon for roasted red pepper or avocado for vegetarian options, and using gluten-free or dairy-free substitutes as needed.
