  • ½ cup baking soda (120g)
  • 8 cups water for boiling (2 liters)
  • Coarse sea salt or pretzel salt for sprinkling
  • 1 egg beaten with 1 tablespoon water (egg wash)
  • 8 oz sharp cheddar cheese, freshly shredded (225g)
  • ¾ cup beer (180ml, lager or pale ale)
  • 2 oz cream cheese, softened (55g)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (about 110°F) with brown sugar. Sprinkle yeast on top, stir gently, and let sit for 5 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until a shaggy dough forms. Gradually add remaining flour until dough pulls away from the bowl and is soft but not sticky. Turn out onto a floured surface and knead for about 3 minutes until smooth and elastic.
  3. Shape the pretzel bites: Divide dough into 4 equal pieces. Roll each into a 12-inch rope, then cut into 1-inch pieces (about 12-15 per rope). Place on a parchment-lined baking sheet.
  4. Baking soda bath: Bring 8 cups of water to a boil in a large pot. Carefully add ½ cup baking soda (it will fizz). Working in batches of 10-12, boil pretzel bites for 20-30 seconds. Remove with a slotted spoon and return to baking sheet, spacing 1 inch apart.
  5. Egg wash and salt: Preheat oven to 425°F (220°C). Brush each bite with egg wash and sprinkle generously with coarse salt.
  6. Bake: Bake for 12-15 minutes until deep golden brown and puffed, rotating sheet halfway through.
  7. Make the beer cheese dip: In a small saucepan over medium-low heat, combine beer and cream cheese. Whisk until smooth. Gradually add shredded cheddar, whisking constantly until each addition melts. Stir in Dijon mustard, Worcestershire sauce, garlic powder, and salt and pepper to taste. Keep heat low to prevent graininess.
  8. Serve immediately: Transfer pretzel bites to a platter with the dip in a small bowl. Serve warm.
