Ingredients

  • Flour tortillas (8-inch size works best for rolling)
  • Deli turkey slices (thinly sliced; Boar’s Head preferred)
  • Cream cheese, softened (use dairy-free if needed)
  • Honey mustard (1 tablespoon)
  • Shredded cheddar or mozzarella cheese (about 1/4 cup or 25 grams)
  • Optional: thinly sliced cucumber or bell pepper for crunch
  • Small apples (Gala or Fuji recommended)
  • Ground cinnamon (1 teaspoon)
  • Light brown sugar or maple syrup (optional, for sweetness)
  • Fresh lemon juice (1 teaspoon)
  • Unsalted butter (1 tablespoon)
  • Baby carrots or snap peas (for crunch and color)
  • Small handful of grapes or berries (seasonal, fresh fruit)
  • Optional: small container of ranch or hummus for dipping

Instructions

  1. Prepare the Cinnamon Apples: Wash and core the apples, then slice into thin wedges about 1/4 inch thick.
  2. Heat 1 tablespoon unsalted butter in a non-stick skillet over medium heat.
  3. Add apple slices, sprinkle with 1 teaspoon ground cinnamon, optional teaspoon of brown sugar or drizzle of maple syrup, and 1 teaspoon fresh lemon juice.
  4. Stir gently to coat apples evenly and cook for 5-7 minutes until tender but still holding shape. Remove from heat and let cool slightly.
  5. Mix the Cream Cheese Spread: In a small bowl, combine 4 ounces (115 grams) softened cream cheese with 1 tablespoon honey mustard. Stir until smooth and creamy.
  6. Assemble the Turkey Pinwheels: Lay one flour tortilla flat on a clean surface.
  7. Spread a thin, even layer of the cream cheese mixture over the entire tortilla.
  8. Layer 3-4 slices of deli turkey evenly on top.
  9. Sprinkle about 1/4 cup shredded cheese over the turkey.
  10. If desired, add thinly sliced cucumber or bell pepper.
  11. Roll the tortilla tightly into a log starting from one edge.
  12. Use a sharp serrated knife to slice into 1-inch pinwheels.
  13. Repeat with remaining tortillas and ingredients.
  14. Pack the Bento Box: Place turkey pinwheels in one compartment.
  15. Add warm cinnamon apples to another compartment.
  16. Fill remaining spaces with baby carrots, snap peas, or fresh fruit.
  17. Add dip (ranch or hummus) in a small silicone cup or container if using.
  18. Close the bento box securely and refrigerate if not eating immediately.

Notes

Use a serrated knife to slice pinwheels to prevent squashing. Soften cream cheese before spreading for easier rolling. Warm apples gently to keep a slight crisp texture. Pinwheels can be made ahead and stored refrigerated; slice before packing. Substitute ingredients to accommodate dietary needs or preferences.
