  • 3 medium fresh peaches, peeled and diced
  • 1 ½ cups fresh or frozen blueberries (225 g)
  • ⅓ cup granulated sugar (65 g)
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, oats, brown sugar, salt, and baking powder.
  3. Cut cold butter into the dry ingredients using a pastry cutter or fingertips until mixture resembles coarse crumbs with some pea-sized bits.
  4. Press about two-thirds of the crumble mixture firmly into the bottom of the prepared pan.
  5. In a medium bowl, toss diced peaches, blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract until coated.
  6. Spread the fruit mixture evenly over the pressed crust.
  7. Sprinkle the remaining crumble mixture over the fruit layer.
  8. Bake for 40-45 minutes or until the topping is golden brown and the fruit filling is bubbling around the edges.
  9. Cool the bars completely in the pan on a wire rack before cutting into 2×2 inch squares.
