  • 1 cup (226g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tbsp pure vanilla extract
  • 1 cup (240ml) whole milk
  • 1 cup (230g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar, sifted
  • 2 tsp vanilla extract (for frosting)
  • 23 tbsp heavy cream or milk (for frosting)
  • 1 ½ cups fresh strawberries, sliced
  • 1 ½ cups fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. Sift together flour, baking powder, and salt in a medium bowl; set aside.
  3. Beat softened butter and granulated sugar with an electric mixer on medium speed for 3-5 minutes until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. With mixer on low, alternately add dry ingredients and milk in thirds and halves, starting and ending with dry ingredients. Mix until just combined.
  6. Divide batter evenly between prepared pans and smooth tops.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  9. For frosting, beat softened butter until creamy (about 2 minutes). Gradually add powdered sugar, vanilla, and 2 tablespoons cream, beating until light and fluffy. Add more cream if needed.
  10. Place one cake layer on serving plate and spread frosting evenly on top. Place second layer over it and cover entire cake with remaining frosting.
  11. Arrange blueberries in a rectangle in the top left corner to represent the star field. Fill remaining space with alternating rows of sliced strawberries to mimic stripes.
  12. Refrigerate cake for at least 30 minutes to set frosting and meld flavors. Bring to room temperature before slicing.

Use room temperature ingredients for best results. Fresh berries are preferred for decoration to avoid sogginess. Chill cake before frosting and before slicing for cleaner cuts.
